Job Description: Breakfast & Prep Chef
Location: The George Hotel, Castletown, Isle of Man
Position Type: Full-time, Permanent
Schedule: 5 days per week (including weekend shifts)
Reporting To: General Manager / Head Chef
Role Purpose
We are seeking an organized, reliable, and early-rising Breakfast & Prep Chef to lead our morning food service. You will take full ownership of the breakfast service, transition seamlessly into afternoon kitchen preparation, and manage inventory ordering to ensure the kitchen stays fully stocked and efficient.
Key Responsibilities
Breakfast Service: Prepare and cook high-quality, hot plated breakfasts for hotel guests and walk-in diners to established brand standards.
Kitchen Prep: Assist the kitchen team with general mise en place, chopping, batch cooking, and evening dinner service preparation.
Ordering & Inventory: Responsible for checking stock levels daily, forecasting ingredient needs, and placing accurate orders with local Manx suppliers.
Kitchen Safety: Maintain strict food hygiene, rotation (FIFO), temperature recording, and allergen compliance during the morning shift.
Requirements & Skills
Qualifications: NVQ Level 1 Professional Cookery certificate (or equivalent hands-on commercial experience).
Experience: Proven experience as a Short-Order Chef, Breakfast Chef, or Line Cook in a fast-paced pub or hotel environment.
Early Riser: Ability to consistently commit to early morning start times (typically 7:00 AM).
Inventory Control: Basic administrative and numerical skills to manage ordering sheets and handle stock rotation.
Certifications: Valid Level 2 Food Safety & Hygiene certificate.
Desirable Criteria
High-Volume Background: Previous success handling high-cover shifts in a busy pub or restaurant environment.
Yield & Waste Control: A strong grasp of portion sizing and proactive waste reduction practices.
Section Versatility: Competence working confidently across different lines or stations in the kitchen.
Dietary Compliance: Familiarity with tracking and managing allergens within a commercial food safety system.
